An oldy but a goodie - I came up with this in response to some serious cravings for old-school coconut rough...this version is sugar free, dairy free and gluten free, raw and vegan! Ingredients - 1 cup almond meal... - 1 cup shredded coconut - 1/4 cup chia seeds - 1/4 cup raw cacao powder - 1/2 cup coconut oil, melted - 1/3 cup rice malt syrup - 1 tbs vanilla essence - cacao nibs and/or sea salt to sprinkle if desired
Combine all ingredients in a bowl and spread into a slice tin lined with baking paper. Allow to set for at least 15 minutes in the fridge and cut into slices. Store in the fridge.
