Raw Chocolate Box
These are a fantastic way to satisfy chocolate cravings, and give you a nice big dose of super-healthy coconut oil - all in a single bite. Don't know about you, but I find it tough to finish dinner without a little something sweet! Perfect solution, right here. Get creative with toppings! Or better yet - as one of my Facebook followers suggested - hide yourself a nut or a berry in the centre! Yum :-)
- ½ cup coconut oil - 3 tbs rice malt syrup - ½ cup of raw organic cacao powder - toppings of your pleasing, such as shredded coconut, buckinis, crushed nuts, goji berries, cacao nibs, etc.
Using a double boiler, gently melt coconut oil and rice malt syrup together. Remove from heat and whisk in cacao powder until you have a smooth mixture. Divide into mini muffin cases and place in the fridge. When the chocolates are almost firm to the touch, press in your toppings of choice and then return to the fridge to set completely. Store in the fridge.
