Nice Cream

The simplest, easiest, most nutritious 'ice cream' you'll ever try... this will literally take you about 5 minutes (post-banana freezing), no ice cream machine required, it's dairy and sugar free, and you'll have full creative control of your flavourings. What's not to love?!
Ingredients: - 2 x frozen bananas (remember to peel them before freezing... you'll thank me later!) - ½ cup almond milk - Any combination of flavouring you wish – i.e. cacao, fruits, nuts, vanilla, cinnamon, additional natural sweeteners (like dates, rice malt syrup or stevia… although I find bananas alone are sweet enough)
To make the nice creams pictured, add the following:
- Coco-Banana - 2 tbs cacao powder - 1-2 tbs shredded coconutMacadamia & Date - ½ cup unsalted macadamia nuts - 3 x medjool dates, pitted and roughly choppedPut everything in a blender, and blend until smooth.
Place mixture in a bowl and then into the freezer to firm. If your bananas were well frozen to begin with, it will be ready to eat immediately.
Also: - If you've given it a good few hours in the freezer before serving, it will be rock hard when you first take it out – let it sit at room temperature for at least 20 minutes to thaw slightly. - Eat over the next few days, max – if it sits in your freezer too long, it loses its creamy-goodness! (don't ask me why... I'm sure it's something super scientific)
